Rooibos it’s the national drink in South Africa, and it comes from the processing of the leaves and the twigs of a leguminous shrub similar to yellow broom, which grows near Cape Town and undergoes a fermentation process that is very reminiscent of black tea, although without containing caffeine.
It’s a drink full of anti-oxidant substances and extremely healthy, with a ruby colour.
The Long Cut variety, with the twigs cut long, has a slightly malted taste with an intense perfume similar to nuts.
Use one tea spoon for a cup, infuse for 5 minutes at 95°.
